Vegetarian Recipes

No Cook Muesli

1 & 1/2 cups organic old-fashioned rolled oats
1/2 cup Rolled Spelt Flakes (gives a nice crunch)
1/2 cup oat bran
3/4 cup sliced or slivered almonds
1/2 cup shelled sunflower seeds
3 tablespoons wheat germ
1/4 teaspoon cinnamon

Optional: 4 tablespoons soy protein booster to add protein or Vitaforce for protein and probiotics as well as your daily supply of vitamins and minerals.

Put it all in sealable bag and roll with a rolling pin. Shake to mix and store in refrigerator or freezer.


Cold Veggie Soup
(also makes a yummy sauce)

Blend to liquify:
1 cup water
1/2 cup olive oil
1 & 1/2 -2 Tablespoons miso
1/2 cup walnuts -preferably soaked 4-8 hours first
sea salt to taste

Briefly blend to chop:
1/2 cup red pepper
1/2 cup tomatoes
1/2 cup zucchini
1 grren onion
1 Tablespoon chopped parsley
1 tablespoon chopped dill
1 Tablespoon minced garlic
splash sesame oil

Pour the miso mixture over the veggies & enjoy!
