boats?&amp;quot;&lt;br /&gt;So...&lt;br /&gt;Pepper Boats&lt;br /&gt;&lt;br /&gt;Mini-bell peppers &lt;br /&gt;&lt;br /&gt;1 can of chicken breast meat packed in water&lt;br /&gt;1/2 celery stalk minced&lt;br /&gt;1/4 of a small onion minced&lt;br /&gt;1/2 carrot minced or shredded&lt;br /&gt;1/2 tsp minced fresh ginger(opt)&lt;br /&gt;4 Tbsp mayo &lt;br /&gt;1/2 tsp oregano or thyme&lt;br /&gt;&lt;br /&gt;1/2 Carrot cut into match sticks&lt;br /&gt;1/2 celery stalk cut into match sticks&lt;br /&gt;&lt;br /&gt;24 triangle corn chips&lt;br /&gt;&lt;br /&gt;Cut about 12 mini-peppers into halves and seed/stem them&lt;br /&gt;&lt;br /&gt;Make chicken salad with the next 7 ingredients.&lt;br /&gt;&lt;br /&gt;Stuff the pepper halves with the chicken salad and use a matchstick piece of type='text'>At my house we eat a lot of fresh unprocessed food...</title><content type='html'>At my house we eat a lot of fresh unprocessed food, and simple is best.&lt;br /&gt;One of our favorite lunches recently was: &lt;br /&gt;Whole Wheat Veggie Pizza w/Pesto Sauce&lt;br /&gt;&lt;br /&gt;I bought the whole wheat dough from Trader Joe&amp;#39;s &lt;br /&gt;I had leftover pesto from a large batch I&amp;#39;d made earlier in the week&lt;br /&gt;&lt;br /&gt;I rolled out the dough, spread on the pesto, added veggie slices I had stashed in the fridge for snacks, and topped it with packaged shreded cheese.&lt;br /&gt;&lt;br /&gt;I popped it into a 450 degree oven until the crust was nicely browned and the cheese was bubbly (about 20 minutes).&lt;br /&gt;&lt;br /&gt;With a 5 and 6 yo in the house it&amp;#39;s sometimes hard to find a recipe that pleases everyone, but this one did it.&lt;br /&gt;&lt;br /&gt;It was simple enough for lunch, but could easily be dinner as
